Red Berry Parfait


This is a great, snack for a summer evening when you want something sweet, but not something heavy and rich. You can substitute blueberries or even sliced banana.

½ cup ricotta cheese
1 tablespoon sugar
½ teaspoon vanilla extract
½ tablespoon plain low-fat yogurt
2 cups fresh raspberries or
sliced strawberries
toasted wheat germ or chopped nuts, optional

Place ricotta cheese, yogurt, sugar, & vanilla in a blender container and whirl until smooth. Set out four small clear-plastic cups. In each cup, place 2 tablespoons berries; add ¼ of the ricotta mixture, then another 2 tablespoons berries. Garnish with toasted wheat germ or chopped nuts, if desired. Makes 4 parfaits.

  2. I’ll gear this review to 2 types of people: current Zune owners who are considering an upgrade, and people trying to decide between a Zune and an iPod. (There are other players worth considering out there, like the Sony Walkman X, but I hope this gives you enough info to make an informed decision of the Zune vs players other than the iPod line as well.)
